Luk očistimo i narežemo na kolutiće.
Češnjak očistimo i sitno nakošemo.
Rajčicu očistimo od kože i sitno nasjeckamo.
Dagnje operemo i očistimo pa ih stavimo u lonac sa lukom i posolimo.
Kuhamo bez vode na laganoj vatri i kada se dagnje otvore izvadimo ih iz ljuski.
Sok koji je ostao u loncu procijedimo i
dolijemo vode da sve skupa bude oko 8 dl tekućine pa dodamo ulje, češnjak, rajčicu, vino, peršin i papar.
Kada zavrije stavimo rižu i kuhamo dok omekša.
Pred kraj kuhanja ubacimo dagnje.
Ukrasiti možemo ljušturama dagnji i cvijetićima peršina.
