The Rici cheese is named after our great-grandfather, who was responsible for passing down this traditional recipe dating back to the early 1900s. Rici is a hard cow's milk cheese with a moderate aroma and a consistent, full flavor that lingers in the mouth. After 12 months of aging, it achieves a moderate hardness and pairs excellently with charcuterie boards and light red wines.
